This is the same dream by a mother named Frances Garcia-Ayalin or 'Miki' to close friends, with big hopes to embark on a venture to bring authentic Southern-style barbecuing to Filipino homes.

I am lucky enough to be part of her dream as I witnessed the launched of her very own home-made recipe called “The Rockin' Ribs”. 

During the food tasting, I got to taste this special “Rockin Ribs” with special barbeque sauce that perfectly complements this authentic home-made slab.

According to Miki, each Rockin' Ribs slab is carefully selected for lean meat and less bone, applied a secret-recipe dry rub and sauce, patiently smoked for eight hours with hickory in custom-made smoker, vacuum sealed, and frozen to preserve freshness and quality. 

No artificial preservatives added, no inferior 'liquid smoke' hickory substitute used, and no skimping on ingredients.

As expected, the meat readily yields to every juicy bite which delightfully reveals mildly sweet, tangy, and smoky flavors as you chew. 

While every stage of development was met with plenty of blissfully closed eyes and mouths chewing in ecstasy, this passionate woman relentlessly pursued perfection in every regard:
